The Chef

This charmingly converted farmhouse, traces its history back to the early 1600s, when it was fortified by the Knights of St John to provide better defences for the old Castello (Citadel) in whose shadow it sits.
First opening as a restaurant in 1992 with the name of Gelmus (for the hill facing the terrace) and later on Il-ħnejja (the arch in Maltese), la Stanza enjoys a tranquil setting, and yet is only a few minutes walk from the bustle of Victoria. It is now ‘home’ to Gilles and his team. The atmospheric dining rooms and the roof terrace with views extending to Gelmus Hill provide the perfect dining experience.
